I know that everyone can relate to this, ever tried to get your kids to eat salad?? Or something with an actual vitamin?? I found the magic trick!! I used to make a salad with a ton of stuff in it and then no one would eat it. So I started doing a full on salad bar when we have company or just for my family.
It’s so easy and this way everyone can make their salad exactly the way they want it. It’s fun for them and fun for me to see all of the different combinations they come up with!! I totally dig fruit in my salad and most people love it as well. I normally make one homemade dressing and then I will put out a few others that I bought. This particular night I came up with this dressing and everyone loved it!!!
Extra Virgin Olive Oil
Sea Salt and Pepper
I throw almost equal parts of vinegar and oil (a little more of the vinegar) and a nice amount of Dijon and then a few big squirts of Maple Syrup and Honey. Season with the garlic, pepper and salt to taste. In the summer when I go to the Farmers Market and I love buying fresh herbs and dumping them in there as well, YUM!!!!! Then I take my immersion blender and go to town. It will emulsify and taste like a million bucks. Leftover dressing lasts in the refrigerator for a couple of weeks. You can use the dressing for a marinade for chicken as well or simply pour it over brown rice and throw some Parmesan on top till it melts!!!
Look how pretty this is!! I have a platter of Organic Pink Lady Apples and fresh Strawberries. A HUGE bowl of freshly spun Organic Romaine Lettuce and bowls of Avocado, Red Seedless Grapes, Pomegranate Seeds, Yellow Cherry Tomatoes, Parmesan Cheese, Gorgonzola Cheese and a GIANT Tupperware filled with the yummy dressing!!
Have fun with it. I have actually made a salad bar at home with over 12 toppings!! Ask the kids for suggestions and if they are like my kids watch out as there hands conveniently attack the bowls before dinner so one never knows if there is going to be anything left in the bowls when company comes!!
