Okey Dokey Artichokey

Do you have 26 seconds to make something that everyone digs??  Come on I know you do :)

This recipe is so easy that it should be illegal!!  It’s perfect for watching Sunday Football.  So run to the store grab the stuff then you will be all ready to yell at the TV if Ponder throws an interception!!!!


2 cans of quartered artichoke hearts

1 cup of real mayonnaise (not miracle whip)

1 cup plus a little more to top of grated Parmesan

Drain the artichokes of all of the excess water and dump it into a baking dish.  Add the mayonnaise and Parmesan cheese and mix it up really well.  Pop it into the oven at 350 degrees and bake it until the top is browned around 35 minutes.  That’s it…how easy is that!!

Serve it with either Ritz crackers or break out a fresh baguette to rip and dip.

That’s it!! you can always add spinach to it as well or fresh crab rocks in it too!!

Put the artichokes in and chop them up so that you get a bit in each bite.

Add the mayo and cheese

Mix it all up and even it out in the dish and then I always top it with a tinch more cheese.

All done and ready to attack it!! GO VIKINGS!!!!!
