Fettuccini Alfredo with Rotisserie Chicken and Broccolini and Mushrooms (a.k.a HEART ATTACK)

Are you ready to eat a really, really good heart attack for dinner?  Now I wouldn’t put this in my mouth with someone else’s fork as I am already on Cholesterol medication,  this one could give you an attack on the spot put apparently it’s the bomb!!!  The great thing about this recipe is you can actually make it in about twenty minutes.  Rachel Ray can’t even do it because she needs 30 minutes!!  I don’t mean to dis Rachel I totally dig her!

Ingredients:

1 box of Fettuccine noodles

1 stick of Butter

1 16 oz carton of Heavy Whipping Cream

5-6 oz of Fresh Grated Parmigiano Reggiano or Asiago

1 Rotisserie Chicken

A big bunch of Broccolini (or you can use Broccoli if you like)

Fresh Mushrooms

To start off and put a big pot of water up to boil for the pasta.  While the water is heating up take your Chicken and pull it apart into pieces.  If you have kids this would be the perfect thing for them to help you with, I mean who doesn’t like ripping stuff apart with their fingers!!

Steam the broccolini for about 3-4 minutes in the microwave with about a tablespoon of water and cover it.  Once that is done drain the water and set it aside as you start on your mushrooms.  In a big saute pan throw the mushrooms in  and cook them until they are nice and browned.  You can add a little olive oil to the pan if you want to but not to much as mushrooms have a ton of water in them already.

Once the mushrooms are finished cooking take them out of the pan and put them to the side with your broccollini.

Once the water is boiling drop your pasta in and set your timer.  Now  you can take your stick of butter and heavy whipping cream and add it to the pan you cooked your musrooms in and turn it on a low setting.   Keep stirring them until the butter is totally melted.  At that point add the Asiago or Parmesan cheese to the butter and cream and keep stirring until the cheese has melted into it as well.

Add a little fresh ground pepper and sea salt and that’s it!! Toss the broccolini, mushrooms and chicken into the sauce then pour it over your noodles!!!  MMMMMM!

I promise you everyone will love this!!

The ingredients are all ready to make fettuccini magic!!

add the cream…

the beginning of the heart attack!!

add the cheese…

stir it up until it’s smooth…

cook your pasta and taste it so you can pull it out when it’s al dente!!

 

add your chicken…

 

add those veggies!!

mix it all up really well…

drain your pasta but  don’t rinse it as you want the starch left on it so the sauce adheres to it better…

pour your magical sauce over the pasta…

    1 tablespoon butter
    2 garlic cloves, minced
    1 tablespoon all-purpose flour
    1 1/3 cups 1% low-fat milk
    1 1/4 cups (5 ounces) grated fresh Parmigiano-Reggiano cheese, divided
    2 tablespoons 1/3-less-fat cream cheese
    1/2 teaspoon salt
    4 cups hot cooked fettuccine (8 ounces uncooked pasta)

    2 teaspoons chopped fresh flat-leaf parsley
    Cracked black pepper
